Parmesan Peppercorn Tortellini Salad


  1. Cook cheese tortellini according to package directions.
  2. Drain and allow to cool completely.
  3. Combine remaining ingredients with tortellini and refrigerate.
  4. Garnish with grated Parmesan cheese and parsley before serving.


  • 1/2 Cup olive(s), black, Greek, pitted, coarsely chopped
  • 4 each onion(s), green, thinly sliced
  • 1 Tbsp. parsley, Italian, chopped
  • 1/2 each Peak Fresh Produce® Pepper(s), Green Bell, julienned
  • 1 Peak Fresh Produce® Tomato(es), coarsely chopped
  • 2/3 Cup Piancone® Dressing, Parmesan and Romano Peppercorn
  • 8 oz. Raffinato® Cheese Block, Provolone, diced
  • 1/8 Cup Roma® Cheese Grated, Parmesan
  • 7 oz. Roma® Tortellini, Cheese, cooked
