Portobello Mushroom Waffle Sandwich


  1. Pour waffle mix into waffle iron and cook until slightly done.
  2. Place portobellos in sauté pan and cook until tender. In the same pan, heat roasted red peppers.
  3. Place greens on bottom of waffle. Layer with roasted red peppers and mushrooms.
  4. Place cheese on top of mushrooms and finish with Archidean blend.
  5. Fold, plate and serve with fresh fruit or your choice of side.


  • 1 cup buttermilk waffle mix, prepared
  • 1 slice cheese, gouda, smoked
  • 1 oz. Peak Fresh Produce® Lettuce, Arcadian Harvest Blend
  • 1/2 mushroom Peak Fresh Produce® Mushroom(s), Portobello, sliced
  • 3 oz. pepper(s), roasted red
