Crispy Mashed Potato-Crusted Chicken

Directions

  1. Place the dry potato mix into a hotel pan (season as you would season your breadcrumbs or use right out of the package).
  2. Brine your items or dip into a seasoned liquid.
  3. Press the raw chicken into the dry potato and allow to set, allowing the potato to adhere to the chicken. Allow them to rest a minimum of 10 minutes.
  4. Deep fry or pan fry at 365° F in a neutral oil until golden brown.
  5. Serve with your choice of dipping sauces.
