Quinoa, Mango, and Cilantro Salsa


  1. In a large bowl, combine the onion, mangoes, quinoa, vinegar and mango nectar. Stir well, using your hand or a wooden spoon. Stir in the pepper.
  2. Let sit for about 20 minutes, then stir in the cilantro and serve.  


  • to ta black pepper, ground
  • 1 cup mango nectar
  • 2 mango(es), peeled & cut into 1/4" dices
  • 1/4 cup Peak Fresh Produce® Cilantro, coarsely chopped
  • 1 Peak Fresh Produce® Onion(s), Red, roasted & cut into 1/4" dices
  • 1 cup quinoa, cooked
  • 1/4 cup vinegar, white balsamic
