Santa Fe Potato Boats
About this Recipe
Roasted corn and black beans fill crispy potato boats topped with Supreme guacamole. Santa Fe, Tex Mex, South of the Border!! This is an easy fit on your appetizer menu or catering. Simplot's Classic Skin-on Boats filled with RoastWorks Flame-Roasted Corn & Black Bean Fiesta blend, along with Simplot's Extreme Supreme Guacamole.
Santa Fe Potato Boats
Directions
- Add olive oil to saute pan and heat over medium high heat. Add RoastWorks Flame-Roasted Corn & Black Bean Fiesta blend. Continue to cook until thoroughly heated. Set aside.
- Fry three Simplot Potato Boats at 350°F for 5 1/2 minutes. Remove from fryer and set on half-sheet pan with parchment paper.
- Fill potato boats with 2 1/2 oz of corn & black beans. Sprinkle with 1 oz each of Cheddar and Mozzarella cheese.
- Place under salamander or in a hot convection oven until cheese is melted. Garnish each on serving plate with 1/2 oz each of Simplot Extreme Supreme Guacamole. Serve with a 2 oz side of salsa and a sprig of cilantro.
