Santa Fe Potato Boats


  1. Add olive oil to saute pan and heat over medium high heat. Add RoastWorks Flame-Roasted Corn & Black Bean Fiesta blend. Continue to cook until thoroughly heated. Set aside.
  2. Fry three Simplot Potato Boats at 350°F for 5 1/2 minutes. Remove from fryer and set on half-sheet pan with parchment paper.
  3. Fill potato boats with 2 1/2 oz of corn & black beans. Sprinkle with 1 oz each of Cheddar and Mozzarella cheese.
  4. Place under salamander or in a hot convection oven until cheese is melted. Garnish each on serving plate with 1/2 oz each of Simplot Extreme Supreme Guacamole. Serve with a 2 oz side of salsa and a sprig of cilantro.
