In a medium mixing bowl, combine cold prepared Custom Culinary® Brown Gravy and Custom Culinary® Country Gravy with 1 cup smoked Gouda; blend with a spoon or spatula. Add sliced potatoes; blend evenly.
Prepare a lightly oiled 2-inch deep stainless steel half food pan.
Place potato mixture evenly into oiled food pan. Evenly top with remaining 1 cup Gouda.
Bake in 350°F oven for 30 to 45 minutes, until potatoes are tender and sauce is bubbling.
Carefully remove from oven and serve hot.
