Sriracha Cod Quesadillas


  1.  Place cod bites in the fryer.
  2. Butter tortilla and place on flat top or grill Sprinkle cheese over entire tortilla. Spread corn salsa and onions over tortilla. Chop cod and spread over tortilla.
  3. Fold in half and place on cutting board. Slice 3 times forming wedges.
  4. Place guac, Sour Cream & Salsa in 2oz cups.
  5. Shingle, place cups next to Quesadilla and serve
