Sriracha Cod Quesadillas


  1. Place cod bites in the fryer.
  2. Butter tortilla and place on flat top or grill. Sprinkle cheese over entire tortilla. Spread corn salsa over tortilla. Spread onions over tortilla.
  3. Chop cod and spread over tortilla. Fold in half and place on cutting board. Slice 3 times, forming wedges.
  4. Place guacamole, sour cream and salsa in 2-ounce cups.Shingle, place cups next to quesadilla and serve.

  • 1.5 oz. Contigo® Salsa, Medium

  • 1 oz. Peak Fresh Produce® Onion(s), Green
  • 3 oz. Sriracha Cod Bites
