Tuna Poke Bowl


  1. Place cucumbers and radishes in a small bowl with vinegar and set aside.
  2. Place rice in bowl. Pile cubed tuna on the edge of the bowl. Place sliced avocado next to the tuna.
  3. Arrange pickled cucumbers and radishes between the tuna and the avocado.
  4. Sprinkle the bowl with sesame seeds and a drizzle of soy sauce.


  • 1/2 lb Empire's Treasure® Tuna, cubed
  • 1/2 Peak Fresh Produce® Avocado(es), thinly sliced
  • 1/4 Peak Fresh Produce® Cucumber(s), thinly sliced
  • 2 Peak Fresh Produce® Radish(es), thinly sliced
  • 2 Peak Fresh Produce® Scallion(s), thinly sliced
  • 1 tsp sesame seeds
  • - - soy sauce, to taste
  • 1/2 cup West Creek® Rice, cooked
  • 2 tbsp West Creek® Vinegar, White, Distilled
