Vanilla Wafer Apple Crunch


  1. In small bowl stir together cookie crumbs and ¼ cup of sugar. Stir in butter.
  2. In another small bowl stir together remaining ¼ cup sugar, cinnamon and lemon peel.
  3. In large bowl toss apple slices with lemon juice.
  4. In 8 x 8 x 2-inch baking dish layer half of apple mixture, sprinkle with half of sugar mixture and half of cookie mixture. Repeat layers.
  5. Tightly cover with foil. Bake at 350°F for 30 minutes.
  6. Uncover. Bake at 350°F for about 15 minutes more or until crisp. Serve warm.


  • 1 tsp cinnamon, ground
  • 1.75 lb Heritage Ovens® Wafers, Vanilla, (coursely crushed, about 44 cookies)
  • 1/4 cup Nature's Best Dairy® Butter, (melted)
  • 4 Peak Fresh Produce® Apple(s), (medium, peeled, cored, sliced)
  • 1 tsp Peak Fresh Produce® Lemon(s), (grated peel)
  • 1/2 cup sugar
  • 1 tbl West Creek® Lemon Juice
