Allegiance® Coddled Cider Pork


  1. Melt butter in sauté pan over medium heat then add pork chops and cook for 2-3 minutes per side until caramelized.
  2. Add the bacon to the pan with the carrot, potatoes, cabbage, and pepper. Cook for 4-5 minutes over medium heat.
  3. Whisk together water and chicken base.
  4. Transfer this to a half pan. Add pork chops, cider vinegar, and stock. Cook for one hour in a ® 400° oven covered then serve.


  • 4 ea Allegiance® bone in pork chops 8-10 oz
  • 2 tbsp Nature's Best Dairy® Butter, Unsalted
  • 1 ea Peak Fresh Produce® 60 count russet potato, medium dice
  • 1 ea Peak Fresh Produce® Carrot(s), medium dice
  • 1/2 ea Peak Fresh Produce® Cabbage, rough chop
  • 1 ea Roma® Bay Leaves
  • 1/8 tsp Roma® Black Pepper, Ground
  • 5 ea West Creek® Bacon, Slice(s), chopped
  • 1 qt water
  • 3 tbsp West Creek® Base, Chicken
  • 1/2 cup West Creek® cider vinegar
