Allegiance® Kalbi Ribs


  1. In a food processor or blender add onion, green onion, sesame oil, water, pepper, brown sugar, soy sauce, rice wine vinegar, garlic, and ½ cup of chili sauce. Puree to produce marinade.
  2. Place ribs in a pan and top with marinade. Cover and refrigerate overnight.
  3. Set smoker to 225 degrees f using your favorite wood. Place the ribs on the racks and cook for 2 ½ - 3 hours.
  4. Wrap the ribs in foil and brush with some of the chili sauce. Return to the smoker to smoke and steam for 2 hours at 225 degrees f.
  5. Remove ribs from smoker then unwrap and brush with chili sauce return to the smoker placing on the rack at 225 degrees f for another hour to caramelize the sauce. You have been waiting long enough, enjoy.


  • 4 ea Allegiance® Saint Louis ribs
  • 1 cup West Creek® Sugar, Brown
  • 1 1/2 cups Asian Pride® Soy Sauce
  • 1/2 cup water
  • 1/2 cup Asian Pride® Rice Wine Vinegar
  • 1 ea Peak Fresh Produce® Onion(s), Yellow, peeled and diced
  • 1 ea Peak Fresh Produce® Onion(s), Green, chopped
  • 3 tbsp Roma Garlic, minced
  • 3 tbsp Asian Pride® Sesame Oil
  • 1 tsp Magellan® Black Pepper, ground
  • 2 cups Asian Pride® Sweet Chili Sauce
