Allegiance® Tenderloin with Contigo® Chipotle Glaze
Directions
- Coat tenderloin in mango seasoning. Wrap in plastic wrap then refrigerate overnight for optimum flavor.
- Heat oil in pan over medium heat and cook tenderloin for 3-4 minutes per side until it reaches an internal temperature of 145 degrees.
- Remove pork from pan and allow to rest for 2-3 minutes before carving. This allows juices to re-distribute.
- Add onions, pepper, garlic, salt, and pepper to pan and cook for 2-3 minutes.
- Pour pineapple juice, honey and whisk in chipotle to pan and allow to simmer for 4-5 minutes.
- Slice and portion tenderloin then top with sauce.

- 2 Allegiance® Pork. Tenderloin, cleaned
- 4 tbsp Magellan® mango habanero seasoning
- 1 Peak Fresh Produce® Onion(s), Red, julienne
- 1 Peak Fresh Produce® Poblano Peppers, julienne
- 1 Peak Fresh Produce® Pepper(s), Yellow Bell, julienne
- 1 tbsp Roma Garlic, minced
- 1/8 tsp Magellan® sea salt
- 1/8 tsp Magellan® Black Pepper, ground
- 1 tbsp Peak Fresh Produce® Cilantro, minced
- 1/2 cup Ascend® Juice, Pineapple
- 2 tbsp West Creek® Honey
- 1 tbsp Contigo Chipotle pepper, pureed
- 1 tbsp Roma® Oil, Olive
