Directions
- Place the barbacoa in an appropriately sized pot with the beef stock and cover with a lid.
- Place on medium-low heat and cook while stirring until tender and hot.
- Shred meat and reserve.
- With tortillas, build burros to your liking with beans, rice, queso fresco, red/green salsa, white onion, cilantro and avocado. Roll and griddle to seal the burro.

- 1 1/2 pt. beef stock
- 8 Contigo® Tortilla(s), Flour , large
- 1 pt. Contigo® pinto bean refried beans
- 1 pt. Mexican rice
- Queso fresco, as desired
- salsa, red/green, as desired
- white onion, diced, as desired
- cilantro, fresh, chopped, as desired
- avocado, sliced, as desired
