Burro Norteño

Directions

  1. Place the barbacoa in an appropriately sized pot with the beef stock and cover with a lid.
  2. Place on medium-low heat and cook while stirring until tender and hot.
  3. Shred meat and reserve.
  4. With tortillas, build burros to your liking with beans, rice, queso fresco, red/green salsa, white onion, cilantro and avocado. Roll and griddle to seal the burro.

  • 1 1/2 pt. beef stock
  • 8 Contigo® Tortilla(s), Flour , large
  • 1 pt. Contigo® pinto bean refried beans
  • 1 pt. Mexican rice
  • Queso fresco, as desired
  • salsa, red/green, as desired
  • white onion, diced, as desired
  • cilantro, fresh, chopped, as desired
  • avocado, sliced, as desired
