Spicy Chicken Fajita Wedges

Directions

  1. Preheat a medium saucepan over medium heat.
  2. Add 1 tbsp of olive oil and sauté chicken for 3-4 minutes, add peppers, onions and fajita seasoning and sauté for a further 4-5 minutes, or until peppers and onions are softened and chicken is fully cooked. Set mixture aside.
  3. Place fries into fryer at 350˚F (180˚C) and fry for 3 1/2 minutes.
  4. Line wedges in a single layer and top with shredded cheese and chicken and pepper mixture.
  5. Broil on low for 6-8 minutes or until cheese is fully melted.
  6. Lift wedges onto serving plate and top with pico de gallo, sour cream and chopped cilantro.

  • 2 3/4 cups Cavendish Farms® FlavorCrisp® Spicy Wedges
  • 1 tbsp. oil, olive
  • 1 chicken breast, thinly sliced
  • 1 pepper(s), red bell, seeded and thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tbsp. Fajita seasoning
  • 1/2 cup cheese, Monterey Jack, shredded
  • 1/4 cup pico de gallo, (or salsa)
  • 1/4 cup sour cream
  • 1 tbsp. cilantro, fresh, freshly chopped
  • salt and pepper, to taste
