Add 1 tbsp of olive oil and sauté chicken for 3-4 minutes, add peppers, onions and fajita seasoning and sauté for a further 4-5 minutes, or until peppers and onions are softened and chicken is fully cooked. Set mixture aside.
Place fries into fryer at 350˚F (180˚C) and fry for 3 1/2 minutes.
Line wedges in a single layer and top with shredded cheese and chicken and pepper mixture.
Broil on low for 6-8 minutes or until cheese is fully melted.
Lift wedges onto serving plate and top with pico de gallo, sour cream and chopped cilantro.
