Peak Fresh Produce® Eggplant Dip


  1. Pulse eggplant and garlic in food processor.
  2. Add tahini, lemon juice, and half a tablespoon of olive oil then pulse to combine.
  3. Remove mixture from bowl and fold in fresh herbs, salt, zest, and pepper.
  4. Chill and serve with crackers, vegetables or grilled/toasted bread.


  • 4 ea Peak Fresh Produce Eggplant, roasted and peeled
  • 1/2 cup tahini
  • 3 ea Peak Fresh Produce® Garlic, Clove(s)
  • 1/2 tsp Magellan® Cumin, ground
  • 1/2 tsp sea salt
  • 1/4 tsp Magellan® Black Pepper, ground
  • 2 tbsp Peak Fresh Produce® Parsley, Fresh, minced
  • 1 tsp Peak Fresh Produce® Thyme, Fresh, minced
  • 1 tbsp Peak Fresh Produce® Oregano, minced
  • 1 Peak Fresh Produce® Lemon(s), zest and juice
  • 1 tbsp Piancone Epicureo® extra virgin unfiltered olive oil
