Empire’s Treasure® Volcano Snapper


  1. Whisk Sriracha, cilantro, and lemon juice in prepared hollandaise sauce and reserve for service.
  2. Heat oil in sauté pan over medium-high heat, then add fish—skin side down.
  3. Cook until crispy, about 2-3 minutes, then turn and caramelize for 2-3 minutes.
  4. Plate fish and top with sauce.

Note: Add crab or shrimp for an upcharge.


  • 2 ea Empire's Treasure® Red Snapper Fillet(s), skin on -10 oz. filet
  • 6 oz Custom Culinary® hollandaise sauce, prepared
  • 1 1/2 tbsp Sauce Chili Sriracha
  • 1 tsp Ascend® Juice, Lemon
