Green Origin® Enchiladas


  1. Puree salsa and green chili then reserve.
  2. In a sauté pan add oil, onions, ground meat, peppers, salt, pepper, onion, powder, cumin, chili powder, paprika, and smoked paprika. Cook for 3-4 minutes over medium high heat.
  3. Pour half the sauce in the bottom of an oven proof pan.
  4. Dip tortilla in sauce then fill with a portion of ground meat alternative mixture and a portion of cheese. Roll into a tube and place in pan with sauce.
  5. Once pan is full pour remainder of sauce over the top adding remaining cheese.
  6. Cover and cook in 375-degree oven for 15-20 minutes then enjoy.


  • 12 Contigo® Tortilla(s), Corn
  • 3 cups Bacio® mozzarella and provolone cheese, shredded
  • 1 Peak Fresh Produce® Onion(s), Yellow, julienne
  • 1 Peak Fresh Produce® Poblano Peppers, julienne
  • 1 Peak Fresh Produce® Pepper(s), Green Bell, julienne
  • 1 cup Peak Fresh Produce® Mushroom(s), Button, finely chopped
  • 2 lbs Green Origin® ground meat alternative
  • 1 tbsp Roma® Cumin, Ground
  • 1 tbsp Roma® Chili Powder
  • 1 tbsp Roma® Paprika
  • 1 tsp paprika, smoked
  • 1 tsp Magellan® Onion Powder
  • 1/2 tsp Magellan® sea salt
  • 1/2 tsp Magellan® Black Pepper, ground
  • 3 cups Contigo® Salsa, Fire Roasted
  • 1 cup Contigo® green chili, chopped
