Grilled Corn Salad


  1. Rub corn in olive oil then place on medium heat area of grill to lightly char.
  2. Remove from grill and cut the kernels from the cob into a bowl.
  3. Add remaining ingredients to bowl and toss then sprinkle with cilantro and serve.


  • 8 ea Peak Fresh Produce® Corn, husked and silk removed
  • 2 tbsp Roma® Oil, Olive
  • 1 ea Peak Fresh Produce® Lime(s), juice and zest
  • 1 cup Peak Fresh Produce® Onion(s), Green, chopped
  • 2 tbsp Peak Fresh Produce® Cilantro, Fresh, chopped
  • 1/4 cup West Creek® Mayonnaise
  • 1 tsp Roma® Cumin, Ground
  • 1/4 cup Peak Fresh Produce® Onion(s), Red, small dice
  • 1/2 cup Roma® Cheese, Feta, crumbled
  • 1/8 tsp Magellan® sea salt
  • 1/8 tsp Magellan® Black Pepper, ground
