Kale and Feta Baked Sweet Potato


  1. Place potatoes on parchment paper lined sheet pan.
  2. Heat oven to 450° and bake potatoes for 45-60 minutes until tender.
  3. Remove potatoes from oven and let cool for 15 minutes. Cut potatoes in half and scoop out flesh into bowl. Be careful to keep skins in good shape. Toss potato flesh with butter, salt, pepper, kale, and feta cheese.
  4. Return to skins and serve.

  • 1/4 cup Roma® Cheese, Feta, crumbled
  • 1/8 tsp salt, sea
  • 1/8 tsp Roma® Black Pepper, Ground
