Coda® Coffee Panna Cotta with Raspberry Coulis
Directions
- In a small bowl, mix gelatin and cold water and let bloom for 5 minutes.
- Heat cream, milk, coffee, sugar, and salt until it is just about to simmer. (don’t overheat)
- Stir in gelatin mixture until fully incorporated and pour through a fine mesh strainer.
- Portion into desired serving vessel and place in cooler, covered, for 5 hours until it has fully set.
- For serving: drizzle cooled raspberry coulis over panna cotta and garnish with fresh raspberries & a mint leaf.
Ingredients
- 1 cup Nature's Best Dairy® Cream, Heavy
- 1/4 cup Nature's Best Dairy® Milk, Whole
- 1/2 cup Coda® Notorious Dark coffee, brewed
- 1/4 cup West Creek® Sugar, Granulated
- 1 1/2 tsp. gelatin, powdered
- 1 1/2 tbsp. water, cold
- 1/2 tsp. Magellan® Pure Vanilla Extract
- 1/4 tsp. West Creek® sea salt kosher
- Raspberry Coulis, (see recipe below)
Raspberry Coulis
Directions
- Add raspberries, sugar, lemon juice & zest to a saucepan and bring to a simmer.
- Simmer until raspberries break down and sugar is dissolved, about 5 minutes.
- Pour through a fine mesh strainer and let cool.

- 6 oz. raspberries, fresh
- 2 tbsp. West Creek® Sugar, Granulated
- 2 tbsp. Magellan® Lemon Juice
- 1 tsp. Peak Fresh Produce® Lemon(s), zest only
- 1 tsp. Flavorsmith® Hot Honey
