Coda® Coffee Panna Cotta with Raspberry Coulis

Directions

  1. In a small bowl, mix gelatin and cold water and let bloom for 5 minutes.
  2. Heat cream, milk, coffee, sugar, and salt until it is just about to simmer. (don’t overheat)
  3. Stir in gelatin mixture until fully incorporated and pour through a fine mesh strainer.
  4. Portion into desired serving vessel and place in cooler, covered, for 5 hours until it has fully set.
  5. For serving: drizzle cooled raspberry coulis over panna cotta and garnish with fresh raspberries & a mint leaf.

  • 1 cup Nature's Best Dairy® Cream, Heavy
  • 1/4 cup Nature's Best Dairy® Milk, Whole
  • 1/2 cup Coda® Notorious Dark coffee, brewed
  • 1/4 cup West Creek® Sugar, Granulated
  • 1 1/2 tsp. gelatin, powdered
  • 1 1/2 tbsp. water, cold
  • 1/2 tsp. Magellan® Pure Vanilla Extract
  • 1/4 tsp. West Creek® sea salt kosher
  • Raspberry Coulis, (see recipe below)

Raspberry Coulis

Directions

  1. Add raspberries, sugar, lemon juice & zest to a saucepan and bring to a simmer.
  2. Simmer until raspberries break down and sugar is dissolved, about 5 minutes.
  3. Pour through a fine mesh strainer and let cool.

  • 6 oz. raspberries, fresh
  • 2 tbsp. West Creek® Sugar, Granulated
  • 2 tbsp. Magellan® Lemon Juice
  • 1 tsp. Peak Fresh Produce® Lemon(s), zest only
  • 1 tsp. Flavorsmith® Hot Honey
