Peak Fresh Produce® Colcannon Potatoes
Directions
- Cook bacon in a saucepan over medium heat until brown. Remove bacon pieces from pan and place on paper towel. Leave rendered bacon fat in pan.
- Add olive oil to pan with cabbage and onion. Cook for 5-6 minutes until caramelized. Remove cabbage and onion from pan and reserve.
- Bring water and potatoes to a boil in saucepan. Cook until potatoes are tender.
- Drain potatoes and place in bowl with butter and cream. Mash potatoes.
- Fold in bacon, cabbage and onion mixture into potatoes then serve.

- 1/2 cup Ridgecrest® Bacon, chopped
- 1/2 Peak Fresh Produce® Cabbage, green, chopped
- 1 Peak Fresh Produce® Onion(s), White, diced
- 1/2 cup Nature's Best Dairy® Cream, Heavy
- 1/4 cup Nature's Best Dairy® Butter, Unsalted, melted
- 1/8 tsp Magellan® sea salt
- 1/8 tsp Magellan® Black Pepper, ground
