Peak Fresh Produce® Colcannon Potatoes


  1. Cook bacon in a saucepan over medium heat until brown. Remove bacon pieces from pan and place on paper towel. Leave rendered bacon fat in pan.
  2. Add olive oil to pan with cabbage and onion. Cook for 5-6 minutes until caramelized. Remove cabbage and onion from pan and reserve.
  3. Bring water and potatoes to a boil in saucepan. Cook until potatoes are tender.
  4. Drain potatoes and place in bowl with butter and cream. Mash potatoes.
  5. Fold in bacon, cabbage and onion mixture into potatoes then serve.


  • 2 lbs Peak Fresh Produce® Potato(es), Russet, peeled and diced
  • 1/2 cup Ridgecrest® Bacon, chopped
  • 1/2 Peak Fresh Produce® Cabbage, green, chopped
