Reuben Baked Potato


  1. Wash potatoes
  2. Rub with olive oil
  3. Bake in oven at 350 degrees until softened
  4. Cut in half and core out each side to make a cup, reserving the cored potato
  5. In a bowl, mix all other ingredients except cream cheese and Parmesan
  6. Mix cream cheese with extra cored potato
  7. Combine potato and cream cheese mixture with other mixed ingredients
  8. Scoop mixture into each half, heaping it over a little
  9. Sprinkle Parmesan cheese on top and bake until browned
  10. Sprinkle with paprika and serve.


  • sprinkle paprika 
  • 1 tsp. caraway seeds
  • 1/2 cup cheese, Swiss, shredded
  • 5 oz. corned beef, fully cooked, chopped
  • 1 tsp. Peak Fresh Produce® Garlic, Clove(s), chopped
  • 3 Tbsps. Peak Fresh Produce® Onion(s), Green, chopped
  • 4 Peak Fresh Produce® Potato(es)
  • 3 Tbsps. Roma® Cheese, Parmesan, grated
  • 14 oz. sauerkraut
  • 3 oz. West Creek® Cream Cheese
  • 1 Tbsp. West Creek® Sauce, Horseradish
