Sautéed Apple & Cabbage
Directions
- In a large sauté pan over medium-high heat, add olive oil and bacon. Cook for 2-3 minutes.
- Add onion, cabbage, apples, salt, and pepper to pan and cook for 6-7 minutes, until cabbage is browned and softened.
- Pour in cider and sherry and allow to reduce by half.
- Add apple juice and simmer for 8-10 minutes, then serve.

- 1/2 Peak Fresh Produce® Cabbage, green, diced
- 2 tbsp Roma® Oil, Olive
- 4 Peak Fresh Produce® Apple(s), Granny Smith, peeled, cored, and diced
- 1 Peak Fresh Produce® Onion(s), White, diced
- 1 cup Ridgecrest® Bacon, Applewood Slice(s), chopped
- 1/2 cup West Creek® Vinegar, Apple Cider
- 1/4 cup Piancone® cooking sherry
- 1 cup Ascend® Apple Juice
- 1/4 tsp Magellan® sea salt
- 1/4 tsp Magellan® Black Pepper, ground
