Directions
- Cook the frozen pre-made pot roast according to the manufacturer's instructions until fully cooked, tender, and heated through. Remove the cooked pot roast from its cooking liquid and shred into small, bite-size pieces.
- Place shredded beef in a sauce pot. Add birria consommé and gently heat until the beef is hot and well coated. Do not boil. Allow excess consommé to drain from the beef. The beef should be moist and flavorful but not dripping wet.
- Place one 12" pizza crust on a pizza screen, pan, or peel according to your kitchen's pizza-oven setup.
- Spread 3 oz of birria consommé evenly over the crust, leaving approximately a 1/2-inch border around the edge. Sprinkle approximately 2 oz of the mozzarella evenly over the consommé. Add 5 oz of prepared birria beef evenly across the pizza, avoiding a heavy concentration in the center. Top evenly with the remaining 4 oz mozzarella.
- Bake according to the pizza crust manufacturer's recommended temperature and cooking time. Cook until the crust is crisp and fully cooked, the cheese is completely melted, and the toppings are hot. Make sure there is no excessive liquid pooling in the center. Because the consommé is being used as the sauce, proper baking is important for maintaining a crisp crust.
- Remove the pizza from the oven and allow it to rest for approximately 30–60 seconds. Finish with 0.15 oz fresh cilantro.
- Garnish with chopped Cilantro and diced Red Onion, Slice, and Serve with a 3 oz. ramekin of warm birria consommé for dipping!
