Boursin Chicken Pesto Sandwich
Directions
- Dredge chicken in flour, eggwash, then breadcrumbs. Heat olive oil to 360 degrees in a saute pan over medium heat.
- Place breaded chicken into pan, cook until golden on each side about 3 minutes per side. Reserve until ready to assemble sandwich.
- Place boursin cheese on top of cooked breast and melt.

- 1/4 cup cheese, Boursin
- 1 chicken, breast(s), frozen, breaded
- 3 Peak Fresh Produce® Lettuce, Romaine, Leaf
- 3 oz pesto sauce
- 2 slices bread, seven grain, toasted
- 1 Peak Fresh Produce® Tomato(es), 4 thin slices
