Contigo® Pork Al Pastor Jasmine Birria Rice Bowl

Directions

  1. For the salsa, fold together apples, black beans, pinto peans, red bell pepper, green bell pepper, red onion, Roma tomato, roasted jalapeno, honey, half a teaspoon of cilantro, extra virgin olive oil, rice wine vinegar, lime juice, salt and ground black pepper. Refrigerate overnight for flavors to combine.
  2. Whisk together the water and birria base in a saucepan and add jasmine rice. Bring to a boil then cover and simmer for 10-15 minutes until rice is tender. Remove from heat and fold in one tablespoon of cilantro.
  3. Heat butter flavored oil in sauté pan over medium high heat. Add pork al pastor slices in pan, season with salt and pepper. Cook for 2-3 minutes then fold in green onions.
  4. Place rice in a bowl then top with apple and bean salsa followed by the pork al pastor.
  5. Arrange the sliced avocado on one side of the bowl and place a dollop of sour crema on top then sprinkle the crumbled queso fresco.
