Parmesan Crusted Chicken


  1.  Mix crushed crackers, ¾ cup parmesan cheese, Italian seasoning and garlic powder by hand in bowl.
  2. Place Brilliance in separate bowl and dip chicken into oil (Breading station style) Remove chicken from oil, (don’t wipe it off) and then place one at a time in cracker bowl. Coat well on all sides and place on baking pan, not touching, ready to bake. Bake in convection oven at 350 until chicken is crispy and done.
  3. Cook and drain pasta, toss with pesto and season as needed with salt and pepper.

  4. Heat Pasta Sauce on stove and hold warm.

  5. Place pasta in center of family style platter and surround with fully cooked chicken, ladle the pasta sauce over the chicken breast and sprinkle with remaining parmesan cheese. Garnish with fresh basil leaves


  • 2 tbsp Roma® Basil Pesto
  • 6 5 oz West Creek® Chicken, Breast(s), boneless
  • 1/2 tsp Roma Garlic, powder
  • 2 tsp Roma® Italian Seasoning
  • 3 cup Brilliance Butter Flavored Oil
  • 1 1/2 cup Ultimo Shredded Parmesan Cheese
  • 3 1/2 cup Piancone® Pasta, Penne
  • 5 cup RITZ Crackers, crushed
