Peak Fresh Produce® Spring Salad


  1. Melt butter in sauté pan and add walnuts. Toast for 1 minute then add sugar and toss until sugar is melted.
  2. Season with Cajun and cayenne spices. Remove from pan and allow to cool.
  3. Toss greens and tomatoes with vinaigrette then place in center of plate. Top with sliced pears.
  4. Arrange croutons, blue cheese crumbles, and sprinkle with spiced walnuts.


  • 2 cups Peak Fresh Produce® Lettuce, Arcadian Harvest Blend
  • 2 1/2 oz Village Garden® Raspberry Vinaigrette Dressing
  • 1/2 ea Peak Fresh Produce® pear(s), half sliced
  • 1/4 cup Roma® Cheese Crumbles, Blue
  • 6 ea Peak Fresh Produce® Tomato(es), Grape
  • 1/2 cup West Creek® croutons
  • 1/4 cup Magellan® Walnuts
  • 1 tbsp Nature's Best Dairy® Butter, Unsalted
  • 1/2 tsp Magellan® Cajun seasoning
  • 1/8 tsp Roma® Cayenne Pepper
  • 1/8 tsp Magellan® sea salt
