Pork Tenderloin and Mango Skewers

Directions

  1. Preheat grill to medium-high. Preheat fryer to 350°F
  2. Thread pork, onion, and mango onto long metal skewers or wooden skewers that have been soaked in water, alternating ingredients. Combine honey, soy sauce, and lemon juice in a small bowl; stir to combine. Season kebabs with salt and pepper, then brush on all sides with honey mixture.
  3. Grill the skewers, basting with honey mix often, for 10-12 minutes, until pork reaches 135°F or your desired temperature
  4. While pork is cooking but still has 4 minutes left, fry the SeasonedCrisp J.R. Buffalos SIDEWINDERS for 4 minutes, then remove to a paper towel-lined bowl. Serve with two pork tenderloin skewers, sriracha dipping sauce (see below) and mango sauce (see below). Garnish with cilantro.

  • 1/4 cup Ascend® Juice, Lemon
  • 1/4 cup Asian Pride® Soy Sauce
  • 4 mango(es), peeled, pitted, cut into 1"cubes
  • 1 tsp Peak Fresh Produce® Cilantro, for garnish
  • 2 Peak Fresh Produce® Onion(s), Red, cut into 1" cubes
  • 1 tsp salt and pepper, to taste
  • 4 lbs Sidewinders™ Fries Featuring SeasonedCrisp Brand JR Buffalos
  • 1/2 cup West Creek® Honey

Mango Sauce

Directions

  1. Thaw the frozen mangoes.
  2. In a medium-sized bowl, mix chutney with mango chunks, ginger, sriracha, and garlic.
  3. Let stand for a day if possible.

Ingredients

  • 1 tbsp ginger, fresh, grated
  • 1 jar Major Grey's Chutney, 16 oz
  • 1 lb mango(es), frozen
  • 1 tbsp Peak Fresh Produce® Garlic, minced
  • 1 tbsp Sriracha

Sriracha Sauce

Directions

  1. In a small bowl, whisk all ingredients until well incorporated.
  2. Cover and refrigerate.
