Ultimate Breakfast Burger

Directions

  1. For the patty: In a large bowl, mix together the corned beef hash, eggs, breadcrumbs, and scallion.
  2. Scoop into 3 oz patties and flatten slightly. Reserve on sheet pan.
  3. Heat oil in a large skillet over medium heat.
  4. Cook patties 5-6 minutes per side, until golden brown. Transfer to paper towel lined plate until ready to serve.
  5. For the burger build: Spread the Thousand Island on the bottom burger bun. Top with one corned beef hash patty, sauerkraut, sliced avocado, bacon, and a sunny side up egg, and top bun.

  • 2 ea. egg(s), beaten
  • 1/2 cup breadcrumbs
  • 3 ea. Scallions, fresh, sliced
  • 3 Tbsp. oil
  • 1 ea. brioche buns, toasted
  • 1 1/2 Tbsp. dressing, thousand island
  • 2 Tbsp. sauerkraut
  • 1/4 ea. avocado, sliced
  • 2 slices bacon, cooked
  • 1 ea. egg(s), cooked, sunny side up
