Blackened Beef Petite Tournedos with Gorgonzola Crème


  1. Coat tournedos with Cajun Seasoning and let rest for an hour under refrigeration.
  2. Cook tournedos under broiler, on grill or sauté to desired degree of doneness.
  3. In a saucepan over medium heat add olive oil and garlic. Cook for 1-2 minutes then add pepper and heavy cream. Allow to simmer and recue for 3-4 minutes.
  4. Whisk in gorgonzola cheese until melted into cream then whisk in parsley.
  5. Place tournedos on plate and sauce the top then arrange sage leaves and serve.


  • 3 ea Surety Beef® Tournedos, 3 oz portions
  • 1/4 cup Magellan® Cajun seasoning
  • 2 cups Nature's Best Dairy® Cream, Heavy
  • 1/4 cup Roma® Cheese Crumbles, Gorgonzola
  • 1/2 tsp Roma® minced garlic
  • 1 tsp Roma® Oil, Olive
  • 1/8 tsp Roma® Black Pepper, Ground
  • 1 tbsp Peak Fresh Produce® Parsley, Fresh, chopped
  • 6 ea Peak Fresh Produce® Sage, leaves, fried as a garnish
