Ricotta and Forest Berry Parfait


  1. In a saucepan warm one cup of raspberries and bourbon over medium heat for 2-3 minutes. Transfer to blender and puree then return to heat and add half of the sugar until mixture can coat the back of a spoon. Cool to room temperature.
  2. In a bowl fold together ricotta, honey, mint, salt, lemon zest, and cream cheese.
  3. Pour some of the bourbon berry glace in bottom of glass adding some whole berries. Top with ricotta mixture.
  4. Add some berries and sunflower seeds on top then garnish with mint and serve.


  • 1 cup Peak Fresh Produce® raspberries
  • 1 cup Peak Fresh Produce® blueberries
  • 2 cups Roma ricotta cheese
  • 1/4 cup Nature's Best Dairy® Cream Cheese, room temperature
  • 2 tbsp Peak Fresh Produce® Mint, (reserve some leaves for garnish)
  • 2 tbsp West Creek® Honey
  • 1/4 tsp salt, sea
  • 1 cup bourbon
  • 1 cup raspberries
  • 1 cup West Creek® Sugar, Granulated
  • 1/4 cup Magellan® Sunflower Seeds
