Ricotta and Forest Berry Parfait
Directions
- In a saucepan warm one cup of raspberries and bourbon over medium heat for 2-3 minutes. Transfer to blender and puree then return to heat and add half of the sugar until mixture can coat the back of a spoon. Cool to room temperature.
- In a bowl fold together ricotta, honey, mint, salt, lemon zest, and cream cheese.
- Pour some of the bourbon berry glace in bottom of glass adding some whole berries. Top with ricotta mixture.
- Add some berries and sunflower seeds on top then garnish with mint and serve.
Ingredients
- 1 cup Peak Fresh Produce® raspberries
- 1 cup Peak Fresh Produce® blueberries
- 2 cups Roma ricotta cheese
- 1/4 cup Nature's Best Dairy® Cream Cheese, room temperature
- 2 tbsp Peak Fresh Produce® Mint, (reserve some leaves for garnish)
- 2 tbsp West Creek® Honey
- 1/4 tsp salt, sea
- 1 cup bourbon
- 1 cup raspberries
- 1 cup West Creek® Sugar, Granulated
- 1/4 cup Magellan® Sunflower Seeds
