The Story Behind the Chef

Christine Cradock Allhoff, CEC—graduated from The Culinary Institute of America in Hyde Park, NY with AOS in Culinary Arts and holds a BA in Public Relations from Fontbonne University. She began her culinary career making sandwiches at the original location of the St Louis Bread Company, which has grown into the nationally known Panera Bread. She worked her way up from daytime prep cook to executive chef in some of the top restaurants in Champaign, IL, Boston, MA and St Louis, MO, and has worked at several James Beard Award winning establishments.

She was the lead instructor at the Culinary Institute of St Louis at Hickey College until joining the team at Performance Foodservice Middendorf in 2018. Her 20 years of experience as an independent restaurant chef (and PFS customer) lends vision and integrity to her role as Corporate Chef, Pizza & Italian Specialist, and Brands Manager.

Christine loves helping our customers grow, whether developing concepts from the ground up or refreshing their menus with LTOs and features. “Food is like a handshake—a great way to introduce yourself, hard to turn down, and always makes people smile.”
