Braveheart® Steak Bites with Arrabbiata Sauce & Pesto Cream

Directions

  1. Heat oil to 350-degrees F. Cook bites for 3-4 minutes until golden brown.
  2. Place on serving plate and serve with side of both sauces.

Ingredients

  • 6 Braveheart® Angus Steak Bites
  • for frying Brilliance® oil
  • 1/4 cup Luigi® Arrabbiata sauce, (see recipe below)
  • 1/4 cup Roma® pesto cream, (see recipe below)

Luigi® Arrabbiata Sauce

Directions

  1. In a saucepan over medium heat add olive oil and garlic. Cook for 1-2 minutes.
  2. Pour in red wine and allow to recue by half.
  3. Add tomatoes, lemon juice, oregano, chili flakes, salt, and pepper. Simmer for 8-10 minutes.

Ingredients

  • 1 pt Luigi® Crushed Tomatoes
  • 1/4 cup Roma® red cooking wine
  • 1 tbsp Piancone® Oil, Olive
  • 1 Peak Fresh Produce® Lemon(s), juice only
  • 1/2 tsp Peak Fresh Produce® Garlic, minced
  • 1 tsp Magellan® crushed chili flakes
  • 1 tsp Peak Fresh Produce® Oregano, chopped
  • 1/8 tsp Kosher salt
  • 1/8 tsp Roma® Black Pepper, Ground

Roma® Pesto Cream

Directions

  1. Whisk pesto sauce into alfredo to produce pesto cream.
  2. Hold product above 140-degrees F in steak well for service.

  • 1 container Roma® pesto sauce
