Cheddar Biscuit Hake & Harvest Apple Salad

Directions

  1. Prepare the Hake according to the case instructions.
  2. Divide the spring mix, apple, red onion, walnuts, and cranberries between six bowls. Drizzle with the vinaigrette and toss to combine. Top with a portion of fully cooked Hake and enjoy!
  3. Chef's Tip: Add Feta or Goat Cheese for an extra layer of flavor!

Ingredients

  • 6 High Liner Foods Uppercrust® Gluten Free Cheddar Biscuit Style Breaded Cape Hake
  • 1 lb. greens, spring mix
  • 2 ea. apples, cored and sliced
  • 1/2 ea. red onion, sliced
  • 8 oz. walnuts, toasted
  • 4 oz. cranberries, dried
  • as desired Apple Cider Vinaigrette, (see recipe below)

Apple Cider Vinaigrette

Directions

  1. Combine all of the vinaigrette ingredients together in a bowl and whisk vigorously (or shake them together in a mason jar) to combine.

  • 2 oz. vinegar, apple cider
  • 2 tsp. honey
  • 1 tsp. mustard, dijon
  • 1 garlic, clove(s), peeled, minced
  • salt and black pepper
