Citrus Roasted Cauliflower Rice

Directions

  1. Liberally spray the cauliflower florets with pan spray. Toss with salt and pepper.
  2. Pre-heat oven to 450°F. Place cauliflower on a sheet pan and cook in the oven for 15-20 minutes.
  3. Remove cauliflower from the oven and place in a food processor then pulse to chop to resemble rice. Remove from processor and transfer to a bowl.
  4. Toss the cauliflower with dressing. Fold in raisons, carrots, cilantro, orange zest and orange juice. Hold for service.

  • 3 lbs. Peak Fresh Produce® Cauliflower, Floret(s)
  • 1 ea. Brilliance® Canola Pan Coating
  • 1/4 tsp. West Creek® sea salt kosher
  • 1/4 tsp. Roma® Black Pepper, Ground
  • 1 1/4 cup golden raisins
  • 1 cup Peak Fresh Produce® Carrot(s), matchstick, julienne
  • 2 tbsp. Peak Fresh Produce® Cilantro
  • 3 oz. Village Garden® Empress Sesame Ginger Dressing
  • 2 ea. Peak Fresh Produce® Orange(s), juice and zest only
