Elotes Gravy Chilaquiles

Directions

  1. To prepare Fire-Roasted Corn Elote Gravy, prepare Chef's Own Peppered Biscuit Country Gravy according to package instructions.
  2. Whisk in the corn and Tajin seasoning until well blended.
  3. To prepare Elote Gravy Chilaquiles, in a small saucepan, simmer True Foundations Tomatillo Serrano Sauce over medium-low heat.
  4. Once hot, add tortilla chips and toss with salsa until chips are tender and have absorbed sauce, approximately 2-4 minutes.
  5. Place smothered chips in a mound in serving dish. Top with 1/2 cup Fire-Roasted Corn Elotes Gravy and scrambled eggs.
  6. Garnish with guacamole, queso fresco, and cilantro.

  • 1 cup corn, charred (cut from cob or canned)
  • 2 tbsp. Tajin Seasoning
  • 2 cups tortilla chips
  • 3/4 cup Custom Culinary® True Foundations® Tomatillo Serrano Sauce
  • 1/2 cup Fire-Roasted Corn Elotes Gravy, (see recipe below)
  • 2 ea. egg(s), scrambled
  • 1/4 cup guacamole, prepared
  • 2 tbsp. Queso Fresco, crumbled
  • 1 tbsp. cilantro, fresh, chopped
