Directions
- Assemble the filling by combining pumpkin puree, pulled pork, sage, and thyme.
 - Create the empanada by putting filling into dough, topping with goat cheese. Fold and use egg whites to seal the edges.
 - Cool for at least 1 hour.
 - Fry in 350°F oven until golden brown and hot all the way through.
 - Serve.
 
Ingredients
- 1 1/2 lbs. Empanada dough discs
 - 2 ea. egg, white(s), whisked to create an egg wash
 - 12 oz. Libby's Pumpkin Puree
 - 20 oz. Pumpkin, diced and roasted
 - 1 lb. pork, pulled, smoked
 - 12 oz. cheese crumbles, goat
 - 2 tbsp sage, chopped fine
 - 1 tbsp thyme, fresh, chopped fine
 - salt and pepper, to taste
