Mexican Meatball Torta
Directions
- In a skillet, warm pre-cooked BURKE® Beef Meatballs w/Chipotle-Style Seasonings.
- Mix in enchilada sauce and cream cheese.
- In a separate skillet, roast peppers and onions.
- Cut bolillo rolls in half and toast.
- To assemble each torta, place four meatballs and sauce between the 2 bolillo halves. Add 1/4 cup onions, 1/4 cup peppers and 1/4 cup cheese and pop in oven (425 degrees fahrenheit) until cheese melts.
- Garnish with chopped onion, cilantro and pickled jalapeños (if desired). Repeat steps for additional sandwiches.

- 4 Bolillo rolls
- 1 cup pepper(s), roasted red
- 1 cup onion(s), roasted
- 1 cup cheese, pepper jack, melted
- onion(s), chopped. as needed
- jalapeño(s), pickled, as needed
- cilantro, fresh, as needed
