Mexican Street Corn Mac & Cheese
About this Recipe
Stouffer's White Cheddar Mac & Cheese takes on the flavors of elote, the hugely popular Mexican street fare. Grilled corn, diced onions, spicy roasted jalapenos, minced garlic, cumin, and chili powder are combined with Mexican chorizo crumbles, then folded into Stouffer's Mac & Cheese. Topped with fresh avocado salsa.

Directions
- To serve one portion, ladle 10 oz of Stouffer's White Cheddar Mac & Cheese into sauté pan and heat all the way through.
- Fold 2 oz of the Chorizo and Roasted Corn Mix into the White Cheddar Mac & Cheese. Plate and garnish with 2 oz of the Avocado Salsa.

Chorizo and Roasted Corn Mix
Directions
- In a large mixing bowl, add all ingredients and mix until combine.
- Hold hot for service.

- 8 oz corn, kernels, roasted
- 1 oz garlic, peeled, minced
- 1 oz jalapeño(s), roasted, small diced
- 1 tbsp McCormick Culinary® Cumin, Ground
- 3 oz Peak Fresh Produce® Onion(s), Red, diced
Avocado Salsa
Directions
- In a large mixing bowl, add all ingredients and mix until combined.
- Hold refrigerated until use.
