Roasted Garlic and Sun Dried Tomato Minestrone
Directions
- Heat oil over medium high heat. Sauté onions, carrots, and celery.
Add water to sautéed vegetables.
- Whisk in Minor's Gluten Free Vegetable and Minor's Beef Bases and Sun Dried Tomato Pesto and Roasted Garlic Flavor Concentrates. Bring to a simmer.
- Add zucchini, green beans, cabbage and tomatoes, and simmer until all of the vegetables are tender.
- Add macaroni, basil, oregano, vinegar, and serve.

- 1/2 cups basil, fresh, chiffonade
- 2 cups cabbage, shredded
- 3/4 cup carrot(s), finely shredded
- 3/4 cups celery, small dice
- 1 1/2 cups green beans, fresh, 1"-2"
- 1 qt Roma® Pasta, Elbow Macaroni, IQF Precooked
- 2 tbsp Minors Natural Gluten Free Beef Base
- 2 tbsp Minors Natural Gluten Free Vegetable Base
- 2 tbsp Minors Roasted Garlic Flavor Concentrate
- 4 tbsp Minors Sun Dried Tomato Pesto Flavor Concentrate
- 2 tbsp oil, olive
- 1 1/2 cups onion(s), small dice
- 2 tbsp oregano leaves, fresh. chopped
- 2 tbsp vinegar, red wine
- 1 1/2 cups tomato(es), seeded, small dice
- 2 1/2 qts water
- 1 1/2 cups zucchini, small dice
