Roasted Garlic and Sun Dried Tomato Minestrone

Directions

  1. Heat oil over medium high heat. Sauté onions, carrots, and celery. Add water to sautéed vegetables.
  2. Whisk in Minor's Gluten Free Vegetable and Minor's Beef Bases and Sun Dried Tomato Pesto and Roasted Garlic Flavor Concentrates. Bring to a simmer.
  3. Add zucchini, green beans, cabbage and tomatoes, and simmer until all of the vegetables are tender.
  4. Add macaroni, basil, oregano, vinegar, and serve.

  • 1/2 cups basil, fresh, chiffonade
  • 2 cups cabbage, shredded
  • 3/4 cup carrot(s), finely shredded
  • 3/4 cups celery, small dice
  • 1 1/2 cups green beans, fresh, 1"-2"
  • 1 qt Roma® Pasta, Elbow Macaroni, IQF Precooked
  • 2 tbsp Minors Natural Gluten Free Beef Base
  • 2 tbsp Minors Natural Gluten Free Vegetable Base
  • 2 tbsp Minors Roasted Garlic Flavor Concentrate
  • 4 tbsp Minors Sun Dried Tomato Pesto Flavor Concentrate
  • 2 tbsp oil, olive
  • 1 1/2 cups onion(s), small dice
  • 2 tbsp oregano leaves, fresh. chopped
  • 2 tbsp vinegar, red wine
  • 1 1/2 cups tomato(es), seeded, small dice
  • 2 1/2 qts water
  • 1 1/2 cups zucchini, small dice
