Spiced Omelet

Directions

  1. Whisk eggs with paprika, dry mustard, coriander, turmeric, black pepper and salt until smooth.
  2. Heat olive oil or butter in nonstick pan over medium heat.
  3. Pour in egg mixture and cook as thin omelet, without folding. Cook until just set, then fold into flat rectangle that fits sandwich size. Cut into 4 equal portions.

  • 1/2 tsp. coriander, ground
  • 1/4 tsp. turmeric
  • 1/2 tsp. black pepper
