            Parmesan Sun-Dried Tomato Mashed Potatoes
            
                
                    Directions
                    
    - In a large bowl add the hot water and half and half. While whisking, add potatoes and combine. Allow to refresh for 2 minutes.
 
    - While the potatoes refresh, add the remaining ingredients to a food processor and pulse to form a rough pesto.
 
    - Once pulsed and ready, add the potatoes and mix well.
 
    - Serve with your favorite dish.

                                    - 4 oz. minced garlic
 
                                    - 1 lb. cheese grated, Parmesan 
 
                                    - 1 lb. tomato(es), sun-dried
 
                                    - 2 bunches Peak Fresh Produce® Basil
 
                                    -  salt and pepper
