Beer Cod Fish Tacos with Citrus Herb Slaw

Directions

  1. Place cod in to fryer and cook to golden brown.
  2. Place a spoonful of slaw in each tortilla. Slice cod filets and place on top of slaw.
  3. Sprinkle cilantro on top of fish and plate. Star a lemon and garnish plate with lemons and parsley. Serve

Ingredients

  • 1 pinch Peak Fresh Produce® Cilantro, Fresh
  • 3 Empire's Treasure® Cod Filet, Battered, 2-Ounce
  • 1 Peak Fresh Produce® Lemon(s)
  • 1 pinch Peak Fresh Produce® Parsley, Fresh, chopped
  • 3 Contigo® Tortilla(s), Flour 6-inch

Citrus Herb Slaw

Directions

  1. Mix together mayonnaise, orange zest, tangerine juice, celery seed, Lawry's seasoning, white wine vinegar, lemon juice and salt. Allow to sit for 1/2 hour.
  2. Mix in vegetables.
  3. Allow to sit for 1 hour before serving.

  • 3 cups Peak Fresh Produce® Broccoli, Head(s), chopped
  • 3 cups Peak Fresh Produce® Carrot(s), shredded
  • 1 tbsp celery seed
  • 12 cups heart of broccoli, shredded
  • 2 tbsp lemon juice
  • 6 cups mayonnaise
  • 6 tbsp orange zest
  • 3 cups Peak Fresh Produce® Cabbage, Red, shredded
  • 3 cups Peak Fresh Produce® Onion(s), Red, julienned
  • salt, to taste
  • 9 oz tangerine juice, fresh
  • 2 oz vinegar, white wine
