Elote Street Corn

Directions

  1. Puree chipotle and mayonnaise in blender until smooth.
  2. Prepare the Flame-Roasted Corn and Jalapeño blend according to package directions.
  3. Combine corn blend, butter, lime juice, cumin, salt and 2 oz. chipotle mayonnaise in a large bowl.
  4. Garnish with Queso Fresco.

  • 1 tsp cumin, ground
  • 2 oz chipotle chiles in Adobo sauce
  • 1/2 cup Contigo® Cheese, Queso Fresco Crumble, grated
  • 2 tbsp lime, juice
  • 2 oz Nature's Best Dairy® Butter
  • 2 tsp salt, chili lime
  • 2 1/2 lb Simplot® RoastWorks®: Flame-Roasted Corn & Jalapeño Blend
  • 1 cup West Creek® Mayonnaise
