German Potato Salad


  1. Place bacon in large saute pan over medium heat cooking until bacon is crispy. Remove bacon from pan and drain on towel.
  2. Add onion to pan with bacon fat and cook for 2-3 minutes. Pour in vinegar and sugar and cook for 1-2 minutes then remove from heat to cool.
  3. Place potatoes in bowl then pour the mixture from the pan over them. Add the parsley and bacon to the bowl.
  4. Toss to combine and serve.


  • 2 1/2 lbs Peak Fresh Produce® Yukon gold potatoes, diced, peeled, boiled, and cooled
  • 1/2 lb Ridgecrest® Bacon, chopped
  • 1 ea Peak Fresh Produce® Onion(s), Yellow, diced
