Jicama and Sweet Pepper Slaw

Directions

  1. Mix all ingredients together in a bowl and allow to rest overnight in the refrigerator for best flavor results.

  • 1 cup jicama(s), julienned
  • 1 lime(s), juice of
  • 4 tbsp Piancone® Oil, Olive, Extra Virgin
  • 1 tsp pepper, black
  • 1 tbsp Peak Fresh Produce® Cilantro, Fresh, minced
  • 1 Peak Fresh Produce® Pepper(s), Green Bell, julienned
  • 1 Peak Fresh Produce® Pepper(s), Red Bell, julienned
  • 1 Peak Fresh Produce® Pepper(s), Yellow, julienned
  • 1/2 tsp salt, kosher
  • 2 tbsp vinegar, red wine
