Peak Fresh Produce® Lyonnaise Potatoes

Directions

  1. Heat olive oil in sauté pan and cook onions until caramelized then reserve.
  2. Soak potatoes in cold salt water and set aside.
  3. Bring oil in fryer to 350° F. Drain potatoes and cook in oil until golden brown about 3 minutes. Remove from oil and place in bowl.
  4. Add onions, butter, parsley, salt, and pepper to bowl with potatoes fold and serve.

  • 2 ea Peak Fresh Produce® Onion(s), Yellow, julienne
  • 1 tbsp Roma® Oil, Olive
  • 3 lbs Peak Fresh Produce® Potato(es), Russet, peeled & cut lengthwise, then thinly sliced
  • 1 tbsp Roma Garlic, minced
  • Brilliance® oil, for frying
  • 3 tbsp Nature's Best Dairy® Butter, Unsalted, room temperature
  • Magellan® sea salt, to taste
  • 1/4 tsp Magellan® Black Pepper, ground
  • 2 tbsp Peak Fresh Produce Parsley, chopped
