Spicy Pork Carnitas

Directions

  1. Rub 1 can of chipotle adobe and sauce over meat.
  2. Sear off pork. Add onions and garlic, oregano-lightly brown.
  3. Add bay leaf, lime juice, stock and oranges.
  4. Braise for 4-5hrs at 350 until pulls apart. Do not pull apart at this time.
  5. Cool, and reheat for 1 hr the next day at 350. Pull apart at this time.

  • 2 bay leaves
  • 1 cup clarified butter
  • 2 qts chicken stock
  • 15 tbsp adobo sauce, chipotle
  • 2 tbsp oregano, dried
  • 1-2 tsp garlic, clove(s)
  • 3/4 cup lime, juice, fresh
  • 3 onion(s), peeled, quatered
  • 3-4 orange(s), quatered
  • 15.6 pounds Allegiance® Pork, Butt, or pork shoulder cushion meat
  • 5 tbsp West Creek® Salt
  • 4 tomato(es)
