Parmesan Sun-Dried Tomato Mashed Potatoes

Directions

  1. In a large bowl add the hot water and half and half. While whisking, add potatoes and combine. Allow to refresh for 2 minutes.
  2. While the potatoes refresh, add the remaining ingredients to a food processor and pulse to form a rough pesto.
  3. Once pulsed and ready, add the potatoes and mix well.
  4. Serve with your favorite dish.

  • 3 qts. water, hot
  • 1 qt. Nature's Best Dairy® Cream, Half-and-Half
  • 4 oz. minced garlic
  • 1 lb. cheese grated, Parmesan
  • 1 lb. tomato(es), sun-dried
  • 2 bunches Peak Fresh Produce® Basil
  • salt and pepper
